Spicy Pickled Wax Beans

Most of my dad’s side of the family are farmers which means I get bulk sizes of veggies when I visit. Score!!

Yesterday I came home with a bah of fresh wax beans. If you know me, I love spice and pickling so I’m obviously a big fan of this recipe. It’s a simple pickling recipe that takes less than 10 minutes to make.

These spicy pickled wax beans can be used as a delicious side dish or just something to snack on while enjoying a good book. I also like bringing a jar of these to parties or cook outs. Just to be courteous though, I usually bring a little label so everyone knows these babies have a kick to them.

Spicy Pickled Wax Beans


  • Pound of wax beans, ends trimmed
  • 1.5 cups water
  • 1 cup white vinegar
  • 1 tsp olive oil
  • 1 tsp cayenne pepper
  • 1 tsp sugar
  • 2 tsp pickling salt
  • 2 dried red chillis


  1. Place beans in a bowl. Drizzle olive oil and cayenne pepper on beans and mix until coated.
  2. In small saucepan, heat vinegar, water, salt, sugar and chilles until the salt and sugar has dissolved.
  3. Place beans in jars Carefully pour the hot liquid into jar, seal and let cool before placing in refrigerator. Keep in refrigerator for at least one week before serving.
