Most of my dad’s side of the family are farmers which means I get bulk sizes of veggies when I visit. Score!!
Yesterday I came home with a bah of fresh wax beans. If you know me, I love spice and pickling so I’m obviously a big fan of this recipe. It’s a simple pickling recipe that takes less than 10 minutes to make.
These spicy pickled wax beans can be used as a delicious side dish or just something to snack on while enjoying a good book. I also like bringing a jar of these to parties or cook outs. Just to be courteous though, I usually bring a little label so everyone knows these babies have a kick to them.
- Pound of wax beans, ends trimmed
- 1.5 cups water
- 1 cup white vinegar
- 1 tsp olive oil
- 1 tsp cayenne pepper
- 1 tsp sugar
- 2 tsp pickling salt
- 2 dried red chillis
- Place beans in a bowl. Drizzle olive oil and cayenne pepper on beans and mix until coated.
- In small saucepan, heat vinegar, water, salt, sugar and chilles until the salt and sugar has dissolved.
- Place beans in jars Carefully pour the hot liquid into jar, seal and let cool before placing in refrigerator. Keep in refrigerator for at least one week before serving.
