Spicy Pickled Green Beans

First let me say, I LOVE green beans. They’re my go-to veggies for a quick side dish and they’re perfect for a healthy snack.


If you’re a big fan of green beans like I am and a fan of spice, you’ll love keeping a jar of these spicy pickled green beans in your fridge.

Spicy Pickled Green Beans


  • 1 pound green beans, ends trimmed
  • 2 cups white vinegar
  • 1 cup water
  • 5 cloves of garlic, smashed
  • 1 jalapeno, sliced
  • 2 tablespoon Kosher or Pickling salt
  • 1 tablespoon black peppercorns
  • 2 teaspoon sugar
  • 3 dried red chilles


  1. Place green beans, garlic and jalapeños in jar.
  2. In small saucepan, heat vinegar, water, salt, black peppercorns, sugar and chilles until dissolved.
  3. Carefully pour the hot liquid into jar, seal and let cool before placing in refrigerator. Enjoy after 24 hours.

They never last long in our home but the beans will still have its crunch after two weeks but will get spicier the longer they get pickled.

It’s a perfect side dish, healthy snack, and great for parties!
