Roasted Garlic and Red Pepper Hummus

I’ve been obsessed with hummus ever since I started making my own in college. It’s so delicious but can be pretty pricey at the store. Making hummus at home is much cheaper and more fun! 

DSC_1643Not only do I love hummus but I love roasted red peppers!! Figured if you’re going to roast a pepper you might as well roast garlic and an onion while you’re at it.

Roasted Garlic and Red Pepper Hummus


  • 1 red pepper, seeded and cut in thick strips
  • 5 garlic cloves
  • 1/4 onion
  • 1 can chickpeas, drained
  • 1 rosemary spring, chopped
  • olive oil
  • salt and pepper


  1. Set oven to broil.
  2. Drizzle red pepper, onion and garlic with olive oil and sprinkle with salt and pepper. Roast vegetable for 25 minutes, remove once vegetables begin to brown. Place pepper in zip block bag for ten minutes, then peel skin off.
  3. Add ingredients to food processor and blend until blended together.

Dip hummus with vegetables or pita chips. It also tastes delicious on wraps or sandwiches.
