Cinnamon Simple Syrup

Okay, who here still buys simple syrup at the store? Well hopefully after reading this blog post you’ll realize you don’t need to anymore! It’s called simple syrup for a reason, because it’s just so dang simple to make! Once you start, you’ll most likely always have a jar in your fridge. Have fun and get creative with your herbs and spices!

I know I already shared how I make mint simple syrup for delicious mint juleps but during this season I’m all about cinnamon. Love that comfy, warm feeling I get when I smell that spice.

Cinnamon simple syrup goes great with cocktail drinks but also with coffee! There are plenty of ways you can make simple syrups but they’re all very similar, this is just the way I make it.

  • 1/2 cup sugar
  • 1/2 water
  • 3 cinnamon sticks


  1. Combine sugar and water in a small saucepan over high heat. Stir until sugar is dissolved and mixture is clear.
  2. Reduce heat and add cinnamon sticks. Once liquid begins to turn a darker color remove from heat.
  3. Store in an airtight, glass container with cinnamon sticks and place in the refrigerator.

I tend to leave the cinnamon sticks in the jar but feel free to remove them after 2-3 hours if you feel like the simple syrup has enough of that cinnamon taste. Also, if you want to make more or less, just use a 1 to 1 ratio with sugar and water.
